Flavour of the Week- Homade Pasta Sauce


Today's recipe is, well, very simple... and not so much a strict recipe, but something you can play around with.

Homemade Pasta Sauce

What you will need:
tomatoes- 3-4
Red Peppers- 2-3
Olive Oil
Garlic
Onions
Zucchini
Cherry Tomatoes
Herbs, which ever you fancy- basil, parsley, etc
Hot Chili Flakes if you like a little spice
And a blender

What to do:
Lather cleaned red peppers in olive oil and grill until the skins are black... either in the oven or the bbq... Let cool, then peel off the skin and discard, but save the juiceToss chopped tomatoes, peppers and olive oil in the blender... blend to desired consistency... I like it only a little chunky

Meanwhile, toss chopped onions in a pan with olive oil. Cook until translucent, add chopped garlic and celery, cook some more. Add sliced cherry tomatoes and zucchini. Add in spices. Cook more. Then add in the blended tomato and pepper puree. Cook until its all warmed up!

Toss with your favorite pasta and sprinkle on some fresh Parmesan! And there you go! A preservative free pasta sauce, yum yum!

Of course you can modify it and add whatever veggies you like the best!!
